Tasty Tacos are a weeknight favorite! Cook extra chicken and freeze leftovers for later. Serves 8.
1 cup cooked chicken, shredded
1 can corn, 14 ounces, drained
1 can black beans, 14 ounces drained and rinsed
1 cup salsa + extra for serving
8 taco shells
1/2 cups cheese, shredded
2 cups lettuce, shredded
2 limes, divided into 8 wedges
In a microwave-safe bowl, mix cooked chicken with corn, beans and salsa.
Heat in microwave for 2 minutes.
Spoon mixture into taco shells.
Top with cheese and lettuce.
Squeeze lime juice over the top of each taco and serve with more salsa.
