Try this easy seafood and veggie dinner tonight! If you’re not a tilapia fan, try a different fish like whiting or salmon. Also, any veggies the children enjoy will work with this recipe. Serves 4.
1 bunch asparagus
Salt and pepper to taste
1 cup bread crumbs
2 teaspoons seafood seasoning
2 teaspoons garlic powder
4 tilapia fillets
Preheat oven to 425 degrees. Spray baking sheet with cooking spray.
Snap asparagus spears to remove ends. Place asparagus on one-half of the baking sheet and lightly spray with cooking spray. Season with salt and pepper.
Mix bread crumbs, seafood seasoning, and garlic powder together in a shallow dish. Mix eggs in a separate shallow dish. Dip each fillet in egg, then in breadcrumb mixture, and place on the other half of the baking sheet.
Bake for 20 minutes, turning fillets after 10 minutes until golden brown on both sides.
