Everybody loves a good dip on the side of a meal. Give this recipe a try to add that something extra to lunch or dinner. Try adding fresh tomato (diced), onion (diced), cilantro (chopped), or your favorite veggies and seasonings to spice it up. Serves 8.
1 can pinto beans, 14 ounces, or 2 cups dried pinto beans, cooked
2 tablespoons vegetable oil
2 tablespoons lemon juice
¼ teaspoon garlic powder
¼ teaspoon onion powder
Hot sauce, to taste
Pepper, to taste
Drain beans and save 2 tablespoons of liquid.
Using a fork or potato masher, mash beans until smooth.
Add saved bean liquid, oil, lemon juice, and garlic and onion powder.
Stir until well blended.
Season with hot sauce and pepper.
Cover and chill for at least 1 hour.
Serve with cut-up vegetables or whole-wheat crackers.
