Everybody loves a good dip on the side of a meal. Give this recipe a try to add that something extra to lunch or dinner. This Dip It! Bean Dip serves eight.
Tips: Substitute pinto beans for your favorite type of beans. Spice it up! Add fresh tomato (diced), onion (diced), cilantro (chopped), or your favorite veggies and seasonings. Beans can be the basis for many dishes. Slow cook them with other vegetables and seasonings for low-cost, healthful meals.
Ingredients
- 1 can pinto beans, 14 ounces, or 2 cups dried pinto beans, cooked
- 2 tablespoons vegetable oil
- 2 tablespoons lemon juice
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Hot sauce, to taste
Directions
- Drain beans and save 2 tablespoons of liquid.
- Using a fork or potato masher, mash beans until smooth.
- Add saved bean liquid, oil, lemon juice, and garlic and onion powder.
- Stir until well blended.
- Season with hot sauce and pepper.
- Cover and chill for at least 1 hour.
