How to Prepare

- Thaw frozen chicken in the refrigerator, in cold water (while sealed), or in the microwave. Cut as desired and cook immediately after thawing.

Quick and Easy Skillet Chicken Breast
Ingredients
- 2 teaspoons garlic powder
- 1 ½ teaspoons onion powder
- 2 teaspoons paprika or smoked paprika
- 1 ½ teaspoons black pepper
- 1 teaspoon salt
- 1 ¼ pounds boneless, skinless chicken breast
- Cooking oil spray as needed
- Optional: dried oregano, cilantro, parsley
- Optional flavor variations: Live Well Alabama Spice It Up seasonings mixtures
Directions
- Combine all spices into a small bowl. Mix well.
- Sprinkle spices onto both sides of chicken breast.
- Heat a large skillet over medium heat. Spray with cooking spray to prevent sticking.
- Add chicken breast to skillet. Cook approximately 5 minutes on one side.
- Turn the chicken. Cook an additional 3 to 5 minutes or until internal temperature reaches 165 degrees F.
- Allow chicken to rest 5 minutes before serving.

- Enjoy with side dishes like vegetables or whole grain pasta.
- Place on a bun and enjoy as a chicken sandwich.

Easy Baked Chicken Parmesan
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups marinara sauce
- 1 ½ cup shredded mozzarella, reduced fat
- Pasta, cooked according to package
- Cooking oil spray
Directions
- Preheat over to 375 degrees F.
- Spray a baking dish with cooking oil spray. Place chicken breast in baking dish.
- Bake chicken for 25 minutes.
- Top with marinara sauce and reduced-fat mozzarella cheese.
- Bake for an additional 25 minutes or until internal temperature reaches 165F.
- Serve over pasta.
Honey Mustard Chicken
Ingredients
- 3 tablespoons lemon juice
- ¼ cup and 2 tablespoons olive oil, divided
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 ¼ pounds boneless, skinless chicken breast
- 1/8 teaspoon pepper
Directions
- To make a marinade, combine lemon juice, ¼ cup of oil, honey, mustard, and garlic into a small mixing bowl and whisk to combine.
- Reserve 3 tablespoons of the marinade in a separate bowl.
- Transfer the remaining marinade into a zip top plastic bag. Add chicken to bag.
- Seal the bag and coat the chicken. Marinate in the refrigerator for 30 minutes.
- Heat a large skillet over medium heat. Add the remaining 2 tablespoons of oil.
- Remove chicken from the marinade and add to skillet. Discard the marinade.
- Sprinkle chicken with pepper and cook for 5 minutes. Flip and cook until golden brown and the internal temperature reaches 165 degrees F.
- Allow chicken to rest 5 minutes.
- Drizzle with reserved marinade before serving.
