How to Store

  • Keep separate from ethylene-producing fruits like apples, apricots, and cantaloupe.
  • Refrigerate in a plastic bag with tops removed for up to 2 weeks.

How to Prepare

  • Wash and dry.
  • Remove green tops and peel, if desired.
  • Shred or cut into rounds, sticks, strips, or cubes.

How to Enjoy

  • Enjoy raw as a crunchy snack with low-fat dressing or veggie dip.
  • Roast in the oven or sauté in a stir-fry.

Recipes 

Roasted Carrots Caramelized carrots with cilantro

Ingredients

  • 1 large bunch of carrots, cut into rounds 
  • 1 tablespoon olive oil 
  • Optional: cumin, garlic powder, parsley, thyme, pepper 

Directions

  • Preheat oven to 425 degrees F.
  • Line a baking sheet with parchment paper.
  • In a large bowl, toss carrots with olive oil and desired optional flavorings. 
  • Spread the carrot rounds in a single layer on the baking sheet and roast for 15 to 25 minutes, until fork tender and lightly browned.

Honey Mustard Roasted Carrots 

Ingredients

  • 2 tablespoons honey 
  • 2 tablespoons mustard 
  • 1 tablespoon lemon juice 
  • 1 teaspoon olive oil 
  • 1 pound small carrots, chopped 
  • Optional garnishes: green onion or chives, slivered almonds, sesame seeds or premade mix such as bagel seasoning 

Directions

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.  
  • Mix honey, mustard, lemon juice, and olive oil in a small bowl.
  • Coat carrots with the mixture. Spread carrots evenly on the baking sheet. 
  • Bake 20 minutes or until tender. 
  • Garnish with desired optional toppings. 

Carrot Cake Energy Bites 

Ingredients

  • 1 medium carrot, finely shredded  
  • ½ cup nut butter 
  • ½ cup maple syrup 
  • 2 cups unsweetened coconut flakes 
  • 2 cups rolled oats 
  • ½ teaspoon vanilla 
  • 1 teaspoon cinnamon 

Directions

  • Combine all ingredients and roll into balls. 
  • Store in the refrigerator.
