Be Prepared
Before purchasing your turkey, ensure you have ample refrigerator space. Plan for about 1 pound of turkey per person to ensure everyone is satisfied.
Fresh or Frozen
- Quality. There’s no significant quality difference between fresh and frozen turkeys. However, fresh turkeys have a shorter shelf life.
- Convenience. Frozen turkeys allow for advanced purchases, while fresh turkeys eliminate the need for thawing.
Buying a Fresh Turkey
- Timing. Purchase 1 to 2 days before cooking.
- Storage. Store in the refrigerator on a tray or in a pan to catch any juices.
- Safety Tip. Avoid prestuffed, fresh turkeys due to the risk of harmful bacteria.
Buying a Frozen Turkey
- Storage: Keep frozen until ready to thaw.
- Timing. Thaw in the refrigerator allowing 24 hours of thawing for every 4 to 5 pounds of turkey. For example, a 15-pound turkey needs 3 to 4 days to thaw.
- Thawing and Handling. Always wash your hands with soap and warm water for 20 seconds before and after handling the turkey. Keep the turkey in its original wrapper and on a tray to catch juices. A properly thawed turkey can remain in the refrigerator for 1 to 2 days and may be refrozen if necessary.
Cooking Time and Temperature
A turkey must reach an internal temperature of 165 degrees F. A stuffed turkey will take longer to cook. If you are planning to stuff the turkey, do so loosely right before cooking using about 3/4 cup per pound. Bake any extra stuffing separately, ensuring it also reaches 165 degrees F.
Safe Carving and Serving
Let the turkey rest for 20 minutes before carving. This helps the juices redistribute, making it easier to carve. Use a clean cutting board and a sharp knife. Remember to remove all stuffing from the cavity before carving.
Storing Leftovers
Store leftovers in shallow containers within 2 hours of cooking. Refrigerate or freeze them. Consume cooked turkey, stuffing, and gravy within 3 to 4 days, or freeze turkey for up to 3 to 4 months. When reheating, ensure foods reach 165 degrees F.
