How to Store

- Do not wash before storing, because moisture can cause early spoilage.

- Store cooked sweet potatoes in the refrigerator for 3 to 5 days.
- Freeze for up to 10 to 12 months.
How to Prepare
- Wash and dry.
- Leave whole or cut into wedges, cubes, rounds, or thin slices.
How to Enjoy
- Serve mashed, in a skillet hash, as toast, or baked into fries or chips.
- Enjoy whole after baking and topping with healthy toppings.
- Add to salads, soups, grain bowls, casseroles, or even desserts.

Recipes
Baked Sweet Potato
Ingredients
- Sweet potatoes
- Optional toppings: pepper, crushed red pepper, cinnamon, nutmeg, pecans, walnuts, chili powder, cumin, garlic powder, paprika, fresh chopped chives or cilantro, dried cranberries, or Greek yogurt
Directions
- Preheat oven to 425 degrees F.
- Line a baking sheet with aluminum foil.
- Prick sweet potatoes with a fork on all sides.
- Bake until tender, approximately 45 to 50 minutes.
- Let potatoes cool to the touch. Split with a knife.
- Add preferred toppings.
Roasted Sweet Potatoes
Ingredients
- 3 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- Optional: cinnamon, salt, pepper, chili powder, paprika, cumin, or garlic powder
Directions
- Preheat oven to 425 degrees F.
- Add sweet potatoes to a baking dish.
- Drizzle with olive oil and sprinkle with preferred spices.
- Toss or stir to coat the sweet potatoes and spread out in an even layer in baking dish.
- Roast for approximately 30 minutes, flipping sweet potatoes every 10 minutes.
Sweet Potato Toast
Ingredients
- 1 sweet potato, sliced ¼ – ½ inches thick
- Olive oil
- Optional spices: cinnamon, salt, pepper, chili powder, paprika, cumin, or garlic powder
- Optional herbs: fresh chopped cilantro, chives, basil, or parsley
- Optional toppings: honey, nut butter, eggs, spinach, lettuce, avocado, banana, berries, feta cheese, Greek yogurt, tomato, onion, green onion, chopped pecans, walnuts, shredded coconut, dried cranberries blueberries or raisins
Directions
- Preheat oven to 400 degrees F.
- Line a baking sheet with parchment paper or aluminum foil.
- Place sweet potato slices on the baking sheet. Brush lightly with olive oil.
- Bake for approximately 30 minutes, or until cooked through and slightly toasted.
- Let cool and top with preferred toppings.
Tip: Makes a great meal prep option. Save cooked sweet potatoes by placing them in an air-tight container and storing in the refrigerator.
