How to Store

  • Store unripe peaches at room temperature.

How to Prepare

  • Wash and dry.
  • Cut in half and remove the pit. Slice it into wedges or chunks.
  • Dip slices in lemon juice to avoid peaches turning dark after slicing when exposed to air.
  • To remove the peel, dip the peach in boiling water for 30 seconds, cool quickly in cold water, and remove the peel with a knife.

INGREDIENTS

  • 2 cups milk, reduced fat
  • 1 cup fresh peaches, sliced, or 1 cup peaches, canned in 100% juice and drained
  • 1/2 teaspoon lemon juice
  • Optional: dash of nutmeg

DIRECTIONS

1. Put all ingredients in a blender and blend well.

2. Sprinkle with nutmeg, if desired.

INGREDIENTS

  • 2 cups tomato, chopped
  • 1 cup peach, chopped
  • 1/4 cup fresh basil leaves
  • 2 tablespoons red onion, chopped
  • 2 tablespoons lime juice

DIRECTIONS

1. Combine tomato, onion, and peach in a mixing bowl.

2. Chop basil into long, thin strips and add to mixing bowl..

3. Toss with lime juice.

Tip: chicken breast or salmon. For a little spice, add 1 jalapeño with the seeds removed and diced into small pieces. This salsa tastes great on top of a grilled chicken breast or salmon.
