Modified Banana Bread Recipe with Splenda for Baking


⅓ cup Splenda/Sugar Blend for Baking
½ cup oil
2 eggs
1 cup mashed bananas
1 ¾ cup unsifted flour
2 teaspoons baking powder
½ teaspoon salt
Non-stick spray


  1. Preheat oven to 325 degrees.
  2. In a bowl combine all the dry ingredients.
  3. In another bowl, combine the oil, eggs & banana. Blend well.
  4. Fold banana mixture into the flour mixture.
  5. Spray a bread pan with non-stick spray. Pour in batter evenly.
  6. Bake in 325° F oven for 1 hour or until done.
  7. Let stand 10 minutes in pan before inverting pan onto cooling rack.

Makes one loaf.
