Get Your Greens Soup, kale, sausage, and potatoes in white bowl

AUBURN UNIVERSITY, Ala — It’s all in the name. Live Well Alabama’s Get Your Greens Soup recipe has one pound of kale, Italian sausage, diced potatoes and chicken broth. This recipe is high in flavor and nutrients but also dairy free, gluten free and contains no added sugar.

 Ingredients

  • Four links Italian sausage, cut into ½-inch pieces
  • 4 cups chicken broth
  • Three large potatoes, diced
  • 1 pound kale

Pro Tips

Substitute links for one pound of cooked and drained ground sausage if desired. Make kale softer by massaging it for a few minutes after rinsing and before adding it to the soup.


Directions

  1. In large pot over medium heat, cook sausage for 5 minutes or until golden brown. Stir occasionally.
  2. To the pot, add broth and potatoes. Cook 20 minutes.
  3. Rinse kale, remove stems and tear leaves into bite-sized pieces.
  4. Stir in kale. Cook 12 minutes or until kale and potatoes are tender.
