Live Well Alabama Tasty Tacos

AUBURN UNIVERSITY, Ala. – It is Food Friday! This Friday, Live Well Alabama is serving Tasty Tacos. A Live Well twist on a family favorite, tasty tacos are perfect for a Friday fiesta as the weekend rolls in. This recipe makes eight tacos, but can easily be doubled to feed a hungry group of teens or an extended family.

Live Well Alabama is a Supplemental Nutrition Assistance Program-Education (SNAP-Ed) initiative developed by the Alabama Cooperative Extension System at Auburn University. This initiative reaches residents across the state with research-based education.

“Our goal is to raise awareness of healthy lifestyle choices,” said Sondra Parmer, Alabama Extension program leader for nutrition programs. “Through this initiative, we hope individuals with limited budgets will make healthy food choices and choose physically active lifestyles.”

Eating healthy doesn’t have to be difficult or expensive. Live Well Alabama provides numerous recipes that are simple and budget friendly.


  • 1 cup cooked chicken, shredded
  • Eight taco shells
  • One can corn, 14 ounces, drained
  • One can black beans, 14 ounces drained and rinsed
  • ½ cups cheese, shredded
  • 1 cup salsa + extra for serving
  • Two cups lettuce, shredded
  • Two limes, divided into 8 wedges


In a microwave-safe bowl, mix cooked chicken with corn, beans and salsa. Heat in microwave for two minutes. Spoon mixture into taco shells. Top with cheese and lettuce. Squeeze lime juice over the top of each taco and serve with more salsa.
