AUBURN UNIVERSITY, Ala. – On this Food Friday, Live Well Alabama is cooking Quick Stir Fry. This recipe is super easy and a great way to add veggies to your diet. Want to save money? Stock up on canned and frozen veggies when they go on sale. This recipe serves 8.
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 1 tablespoon water
- 1 tablespoon brown sugar
- Salt and pepper to taste
- 1 tablespoon olive oil
- 8 ounces ground beef or turkey
- 1 cup cooked rice, prepared according to package
- 1 16-ounce package frozen stir fry vegetables
Stir together soy sauce, garlic, water, brown sugar, salt, and pepper. Set aside. In a skillet, heat oil over medium heat. Add ground beef or turkey. Cook and stir 5 to 7 minutes or until meat is no longer pink. Stir in soy sauce mixture. Add cooked rice and vegetables. Cook and stir 5 minutes or until vegetables are tender. Stir often to prevent sticking.
