Peachy Green Beans

AUBURN UNIVERSITY, Ala. – On this Food Friday, Live Well Alabama is serving up a side of Peachy Green Beans. It can be hard to get everyone to eat their greens, but with these peachy keen green beans, even the pickiest of eaters will come back for seconds.

“This is the perfect summer side. Peaches and green beans are in season right now, which means they’re fresh, delicious and often less expensive.”

  • Two peaches, cut into thin wedges
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • 2 tablespoons toasted sliced almonds (optional)

Pro Tips

Ripe peaches only last a couple days, so make sure to only get the amount you plan on using. Also, you can save time by keeping frozen green beans on hand.


In a large bowl, toss the peaches and green beans with oil. Transfer the peaches and green beans to a skillet and cook over medium high heat until the peaches and beans are tender. Toss with apple cider vinegar and season with salt and pepper. Add almonds and serve.
