Honey Mustard Zucchini Slaw

AUBURN UNIVERSITY, Ala. – This Food Friday it will be easy to get even the pickiest eaters to find their new favorite veggie with this Honey Mustard Zucchini Slaw. A great alternative to mayo based slaws, the honey and dijon mustard combine to create a delectable sauce for the shredded carrots and zucchini. This would be a great side dish for fish and chicken or on its own for a healthy summer snack!

  • Shredded zucchini, 2 cups
  • Shredded carrots, 2 cups
  • 2 tablespoons of honey
  • 2 tablespoons of Dijon mustard

Pro Tips

Use a cheese grader to shred veggies. Any extra carrots can be used as a great snack later.


Combine all of the ingredients in a bowl and stir. Chill the mixture and then serve.
