Eggplant pizza

AUBURN UNIVERSITY, Ala. – Do you love pizza but are looking for a new and exciting way to enjoy it? Step into the Live Well Kitchen this Food Friday to try Live Well Alabama’s Eggplant Pizzas. This new twist on a classic is high in fiber and has plenty of nutrients to fuel the body and keep it running strong.

“Cauliflower pizza crust gets all the attention, but eggplant slices also make for an easy, low-carb substitute for crust. Just slice, top and bake! It’s great for appetizers or after-school snacks.”

Ingredients

  • Cooking spray
  • Salt, to taste
  • One large eggplant, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Three cloves garlic, minced
  • 1 cup marinara or pizza sauce
  • 1 cup mozzarella cheese, shredded

Pro Tip

Picking out the perfect eggplant can be tricky. To pick a good eggplant, lightly press a finger against the skin. If it leaves an imprint, it is perfect.


Directions

Preheat the oven to 400 degrees F, and then line a baking sheet with aluminum foil, spraying it with cooking spray. Lay the eggplant slices flat on the sheet and season them with salt.

In a small bowl, combine garlic, oil and Italian seasoning. Brush the mixture on top of the eggplant. Bake for 15 minutes.

After removing the eggplant from the oven, top each slice with 1 tablespoon of marinara or pizza sauce and sprinkle each slice with cheese. Bake for another 10 minutes or until cheese is melted. Then, enjoy!
