Chickpea Tomato Salad

AUBURN UNIVERSITY, Ala. – This Food Friday the Live Well Alabama kitchen has prepared Chickpea Tomato Salad. A cool option for hot tailgates under the Alabama sun.

“Chickpeas, also called garbanzo beans, are fat free, high in fiber and a good source of plant protein. They’re the main ingredient in hummus, but are also delicious in salads like this one.”

  • 2 pints of cherry tomatoes, halved
  • 15 ounces of chickpeas, drained
  • ¼ cup of Italian dressing
  • Feta cheese (optional)

Pro Tips

Canned vegetables are great but can be full of salt. Drain and rinse the chickpeas, and other canned vegetables, before using. Save money by stocking up on canned and frozen fruits and vegetables when they are on sale.


Mix all of the ingredients together, chill and then serve.
