AUBURN UNIVERSITY, Ala. – Power through this week with Live Well Alabama’s Chicken Fiesta Power Bowl! This Food Friday, have a fiesta with friends to enjoy these delicious power bowls. The bowls are packed full of energy-giving ingredients, making them perfect for a meal or snack before any adventure or activity.
“Power bowls are a great outlet for creativity. You can make them with any combination of grains, proteins and veggies you like and experiment with different sauces and spices. In my house, we make them ahead for grab-n-go lunches.”

- 1 cup of rice, cooked
- One can of pinto beans, rinsed and drained
- 2 cups of cooked chicken, chopped
- 2 cups of raw spinach
- Two tomatoes, diced
- ¼ cup of plain yogurt
- 2 teaspoons taco seasoning
- One lime, cut into wedges
- Avocado, sliced (optional)
- Cilantro, chopped (optional)
For a change, replace the rice with diced, roasted sweet potatoes. Add any type of vegetables you like. Corn and bell peppers would be a tasty addition.
In four serving bowls, divide and layer the rice, beans, cooked chicken, spinach and tomatoes. Next, mix the yogurt and taco seasoning together in a small bowl. Top each serving bowl with this yogurt mixture, a squeeze of a lime wedge, sliced avocado and chopped cilantro.
