AUBURN UNIVERSITY, Ala. – It’s always a party when avocados are invited! This Food Friday Live Well Alabama is serving up Avocado Party Eggs. Liven up summer tea parties or potlucks with these intriguing finger foods.
“You’ve probably heard that avocados are high in healthy monounsaturated fat. They are also a good source of potassium and fiber. This makes our party eggs a filling snack loaded with nutrients to support heart, muscle and digestive health. That’s something to celebrate!”

- Six hard-boiled eggs, peeled
- One avocado
- 1 teaspoon of lemon juice
- ½ cup of sweet relish
- Salt and pepper, to taste
An avocado is ripe and ready to eat when you can gently squeeze it and feel it yield to pressure. Store ripe avocados in the fridge and harder, greener, unripe avocados on the counter.
After boiling, cut the eggs in half. Remove the yolks and place them in a bowl. Set aside the egg whites. Cut the avocado in half, remove the pit and scoop out the inside. Combine the egg yolks, avocado, lemon juice, sweet relish, salt and pepper. Fill the egg whites with the yolk mixture and sprinkle with paprika. Chill and serve.
