AUBURN UNIVERSITY, Ala. – This Balsamic Roasted Turkey Salad is the perfect Food Friday recipe to get people geared up for the weekend. Whether eating it for a light lunch or serving it for family dinner, this salad is sure to be a crowd favorite. It is not only easy to make, it adds a mix of fruits and vegetables to a person’s diet.


  • 1/4 cup balsamic vinegar
  • 1/4 cup fat-free Italian dressing
  • three cups fresh spinach, chopped
  • one cup fresh Brussels sprouts, thinly sliced
  • four ounces deli roasted turkey breast, diced
  • one tomato, diced
  • two tablespoons low-fat mozzarella, shredded
  • one apple, cored and diced
  • 1/2 cup dried apricots, chopped
  • 1/2 cup walnuts or pecans (optional)


In mixing bowl, whisk together balsamic vinegar and Italian dressing. Add spinach, Brussels sprouts, turkey, tomato, mozzarella cheese, apple, apricots, and walnuts/pecans (optional). Toss well to coat all ingredients.
