Sheet Pan Tilapia with Asparagus

Try this easy seafood and veggie dinner tonight! The Live Well Alabama Sheet Pan Tilapia with Asparagus recipe serves four.

Ingredients

  • Cooking spray
  • 1 bunch asparagus
  • Salt and pepper
  • 1 cup bread crumbs
  • 2 teaspoons seafood seasoning
  • 2 teaspoons garlic powder
  • 2 eggs
  • 4 tilapia fillets

Directions

  1. Preheat oven to 425 degrees F.
  2. Spray baking sheet with cooking spray.
  3. Snap asparagus spears to remove ends.
  4. Place asparagus on half of baking sheet and lightly spray with cooking spray. Season with salt and pepper.
  5. Mix bread crumbs, seafood seasoning, and garlic powder together in a shallow dish.
  6. Mix eggs in a separate shallow dish.
  7. Dip each fillet in egg, then in bread crumb mixture, and place on other half of baking sheet.
  8. Bake for 20 minutes, turning fillets after 10 minutes until golden brown on both sides
