Urban Supplemental Nutrition Assistance Program - Education (USNAP-Ed)


The WEALTH curriculum is offered in a one-unit module. It incorporates the recommendations of the USDA's new Food Guidance System (MyPlate and the Dietary Guidelines for Americans). Part One includes the Orientation Session and General Nutrition. There are 10 lessons in the curriculum that address topics relating to nutrition education: Nutrition, MyPlate, Dietary Guidelines, Food Safety, Reading Food Labels, Food Preparation, the six Major Nutrients, and Food Management. This unit contains an end-of-unit reflection that provides an opportunity for participants to share their perceptions relating to knowledge and skills acquired. Part Two of the curriculum includes the follow-up session of the delayed post-assessment. Each unit lesson consists of the following sections:

  • Objectives

  • Lesson plan format (included is a motivational strategy)
  • Description of supplementary instructional materials
  • Equipment and materials
  • Food demonstration (during specific lessons)
  • Practice activities
  • Illustrative examples
  • References
  • Appendices

The delivery mode is primarily print-based in conjunction with overhead transparencies, food models, videotapes, and food demonstrations to reinforce learning objectives.

Curriculum Length

An orientation session is conducted to enroll participants and administer the participant's Pre-assessment Inventory prior to the start of the first lesson. The complete WEALTH module contains 9 lessons (excluding the orientation session and follow-up session). Each lesson is approximately 60 minutes in length. Upon completion of the program, participants will receive a certificate of completion. A follow-up session is conducted for the purpose of administering the participant's delayed Post-assessment Inventory 3-4 months following the end of training.

Description of Target Audience

WEALTH is designed for English-speaking senior adults and individuals living in public housing in Alabama's metropolitan areas. It is targeted for both males and females. It requires participants to have adequate verbal comprehension ability and the motivation to learn in an interactive group environment.
