Cooking Alabama’s Wild Game, a collection of more than seventy-five recipes for whitetail deer, game birds, small game, and fish, represents some of the best of the best from Alabama’s creative cooks.

The project began in 1986, when the call for recipes went out through county Extension agents all over Alabama. The result was an aggregation of delicious ideas from all parts of the state, from the Tennessee Valley to the Wiregrass to the Gulf Coast. The book also features some of the favorite recipes of the late Earl F. Kennamer, Extension Wildlife Specialist.

In addition, Cooking Alabama’s Wild Game includes information on the proper cleaning, care, and storage of wild game meats. And, if you don’t happen to have game meats on hand, the book tells you how to substitute domestic meats such as lean beef or pork.
