A new
shipment of "The Auburn Cookbook" has arrived just in time
for Christmas orders. For Christmas delivery, orders must be
received by Tuesday, Dec. 17.
The $10 cookbook is 480 pages of delicious recipes,
nutrition and food safety information, meal planning tips, cooking
techniques and more.
Written by Extension food and nutrition specialists,
the 1996 revision of the Auburn Cookbook contains most of the former
book's traditional recipes, modified to contain less fat,
cholesterol and sugar. New recipes were also added including pizza,
tacos, stir-fry, dried beans and pasta. The cookbook is not a diet
cookbook, but its adaptations, substitutions and cooking methods are
designed to help cooks adjust and improve their cooking for a
healthier diet.
At the end of each recipe is a nutritional analysis.
The analysis gives the amount of calories, cholesterol, sodium,
carbohydrates, protein and fat in one serving. It also gives the
percentage of calories that come from fat.
"The cookbook is written for the novice cook as
well as the more experienced," says Dr. Barbara Struempler, an
Extension nutritionist and one of the authors of the book.
"Directions for each recipe explain how to do
many things a beginning cook would not otherwise understand,
therefore, some directions run long. Also, many recipes include
made-from-scratch sauces and toppings and use spices and herbs for
flavoring for healthier meals. These sometimes add up to many
ingredients. However, most recipes are not complicated and only
require a little more measuring and adding," Struempler says.
