2007 CHILTON COUNTY PEACH FESTIVAL

The 2007 Chilton County Peach Festival is sponsored by the Clanton Lions Club. The contact for the festival events is Richard Davis at (205) 755-6740.

Festival Pageants - All are held in the Chilton County High School auditorium, Clanton, AL. Admission is charged.

Fashion Show June 22nd at City Hall in Clanton.

Annual Peach Festival Parade - Clanton, AL - Saturday, June 30th, 9:00 a.m.

Gorgeous peach queens, bands and floats entertain the crowds. Children, bring a bag to collect candy that is thrown!

Festival Peach Auction - Jack Hayes Field, Clanton, AL - Saturday, June 30th following the parade -- barbecue available in the park

Bring your checkbook and bid on a basket of peaches. Local producers donate the peaches, and funds raised go toward Lion's Club projects in the community. The highest bid on a basket yet has been $8,000.00. Chilton County Peach producers should have peaches ready for judging at 8:00 a.m.

2007 Peach Cook-Off Winning Recipes:

FIRST PLACE ADULT DIVISION

Homemade Peach Ice Cream

1 gallon whole milk

1 can sweetened condensed milk

1 can evaporated milk

2 boxes peach Jello

6 medium ripe peaches (diced)

Combine first four ingredients and put into ice cream maker. When it starts to freeze, add peaches.

Enjoy!!

SECOND PLACE ADULT DIVISION

Peach Glazed Grilled Chicken Breast With Feta

4 grilled chicken breast

4 peaches (peeled and sliced)

¼ cup apple juice

2 tablespoons sugar

2 tablespoons olive oil

Feta cheese

mint leaves for garnish

Sautee peaches in olive oil until tender, add apple juice and sugar until sauce thickens. Spoon mixture over grilled chicken and sprinkle with feta cheese. Garnish with a sprig of mint and fresh peach slices.

THIRD PLACE ADULT DIVISION

Primavera Peach Pasta

Ingredient list:

Onion

Bell pepper (red, yellow & Green)

Fresh Garlic

Olive oil

Shrimp (Cooked & de-veined)

Peaches

Alfredo Sauce (1 -16 oz. jar)

Farfalle pasta

Chives (chopped)

· Prepare pasta according to directions on box.

· Peel and coarsely chop 1 medium Vidalia onion (= 1 cup).

· Wash and coarsely chop (approx. 1x1) red, yellow and green bell pepper (= 4 cups).

· Saute` 1 tsp. fresh pressed garlic in 2 Tablespoons olive oil until brown.

· Add 2 cups peeled, de-veined, cooked shrimp with 2 cups chopped peaches. It is best to blanche and peel peaches to make this easier, however, fresh peaches may be used. I used both, about half blanched and about half fresh.

· Add peppers and onion to skillet, cook on high 2 minutes, stirring and mixing all ingredients.

· Cover and cook 20 minutes on medium, stirring occasionally.

· Add 1 16 oz. jar creamy Alfredo Sauce and cook on medium until thickened.

For this recipe I used Barilla Farfalle 1 lb. pasta and Classico Creamy Alfredo sauce.

Spoon over pasta and top with chopped chives. Serves twelve.

FIRST PLACE YOUTH DIVISION

Mini Fruit Pizzas

1 package (18oz.) ready to bake sugar cookies

2 squares (1 oz. each) white chocolate for baking

2 tablespoons milk

1 package (8oz.) cream cheese, softened

1/4th cup powdered sugar

1 cup whipped topping

3 cups fresh Chilton County peaches (peeled, chopped, and sweetened)

Bake cookies according to package directions (set aside to cool)

In large bowl, combine white chocolate, milk, cream cheese, powdered sugar, and whipped topping in a bowl. After cookies are completely cooled, spread each cookie with 1 tablespoon of cream cheese mixture, then drizzle peaches over the top.

SECOND PLACE YOUTH DIVISION

Peach Ice Cream Cup Cakes

· One box cake mix

· 24-30 ice cream cones

· Frosting

· 2 peaches, smashed

Pre-heat oven 350 degrees F.

1. Prepare cake mix according to directions.

2. Fill ice cream cups 3/4th full.

3. Place in baking tray.

4. Bake 15-20 minutes in 350 degree oven.

5. Cake should mound slightly.

6. When cooled, frosting and peaches should be mixed together, then spread on cup cakes.

THIRD PLACE YOUTH DIVISION

Jiffy Peach Cornbread Muffins

1 box Jiffy cornbread muffin mix

1 egg

1/3rd cup half and half milk

2 Chilton County peaches (peeled and chopped)

2 tsp. sugar

½ tsp. butter

1 tsp. apple juice

½ tsp. vanilla

Pre-heat oven to 400 degrees F.

l. Mix Jiffy mix, egg, and milk together in a large bowl.

2. In microwave safe container, stir peaches, juice, vanilla, sugar, and butter. Cook on

high for about 3 minutes.

3. Fold into bread mixture, pour into muffin tins,bake as directed on box or until brown.

Serve warm with butter.

Makes 6 servings.
