Cranberry Chicken Casserole
4 chicken breasts, boiled & chopped
1 (6oz) bag seasoned herb stuffing mix
1 (6oz) bag dried cranberries
¼ cup onions, chopped & sautéed in butter
¼ cup celery, chopped & sautéed in butter
1 can cream of chicken soup
1 can cream of celery soup
1 ½ cup chicken broth (saved from chicken breasts)
1 egg, beaten
1 stick butter, melted
Preheat oven to 325 degrees. In large bowl, mix stuffing mix with cranberries, add beaten egg and melted butter. In separate bowls, mix cream of chicken soup with ¾ cup of broth, and chicken soup w/ ¾ cup of broth. Spray 9x13 casserole dish with cooking spray, layer chicken onion/celery, stuffing mix, celery soup mixture and chicken soup mixture. Continue layering, ending with stuffing mix. Bake for at least one hour, until stuffing mix is brown on top.
Fluffy Peanut Butter Dip
1 6oz container of vanilla yogurt
½ cup peanut butter
½ cup whipped topping
1/8 teaspoon cinnamon
Place cinnamon, peanut butter and yogurt in bowl and beat with wire
whisk until thoroughly blended. Add whip topping to the peanut butter
mixture and beat again until well mixed.
Serve with fresh cut apples or pears.

Chocolate Candy Cheeseball
1- 8 oz. cream cheese, softened
½ cup butter
¼ tsp. vanilla
¾ cup powdered sugar
¾ cup M & M’s, crushed
Combine cream cheese, butter, vanilla until fluffy. Add powdered sugar until combined. Stir in crushed chocolate candies. Refrigerate for 1 hour.
