Stanley P. Wilson Beef Teaching unit and the Lambert-Powell Meats Lab

8:00 a.m.     Check-in and formulation of groups

8:30 a.m.     Live Animal Terminology

9:00 a.m.     Live Animal workshop (rotation lasting 50-55 minutes each)

                    Workshop I:    Evaluating Beef Conformation

                    Workshop II:   Feeder Calf Basics

                    Workshop III:  Fed Cattle Evaluation

12:00 p.m.    Lunch

1:00 p.m.     Carcass Terminology

1:30 p.m.     Carcass Workshops (rotations lasting 50-55 minutes)

                    Workshop I:   Basics of determining USDA Yield Grades

                    Workshop II:  Basics of determining USDA Quality Grades

3:00 p.m.     Hands on Exercise: Grading beef carcasses

4:00 p.m.     Adjourn
